A quick and easy recipe for favorite Scottish biscuits that will delight you.

Ingredients:
- 225g butter
- Tiny pinch salt
- ½ cup superfine sugar (plus extra for sprinkling)
- 2 cups all –purpose flour
- 100g cornstarch
Instructions:
1. Preheat the oven to 170o C.
2. In a large bowl, cream together the butter, salt, and sugar until you get a pale color. You can use the mixer for ease.
3. In a separate bowl, whisk together the flour and the cornstarch and sift into the bowl of butter and sugar. Mix quickly but without over mixed them because it can flake after that.
4. Put the mixture on a surface dusted with flour and form a loose dough.
5. Roll out the dough between two sheets of parchment paper and prick with a fork the surface. Then, use a round hoop/glass to give them a circular shape.
6. Place them on a lightly greased baking sheet and bake them for 25 minutes. As long as shortbreads are warm, sprinkle them with sugar and let them cool completely on a wire rack.
7. Ready!!! Have a good appetite!!
